"MSG is Highly Toxic"
A myth born from a flawed 1968 letter. MSG is simply sodium and glutamate—an amino acid found naturally in tomatoes, parmesan cheese, and human bodies. It is completely safe.
"Space Alters Fermentation"
Recent ISS experiments intentionally fermented miso paste in microgravity. Astronauts confirmed the "space miso" developed distinct, nuttier undertones compared to earthbound batches.
"Ants Can Make Yogurt"
A traditional method revived by scientists: dropping red wood ants into raw milk successfully ferments it. The acid-producing bacteria living on the ants acidifies and thickens the milk.

"Wine 'Legs' Equal Quality"
The droplets running down the inside of a wine glass (legs or tears) are purely an expression of the Gibbs-Marangoni effect. They indicate alcohol and sugar content, never the quality of the vintage.
"Tequila is a Stimulant"
All ethanol, regardless of whether it comes from agave, potatoes, or grain, is a central nervous system depressant. Any "energetic" feeling is just the initial dopamine rush, not a stimulant effect.
"Aged Beer is Better"
Highly hopped beers like IPAs degrade and oxidize rapidly, losing flavor within months. Only high-ABV beers like Imperial Stouts or Barleywines contain the structure to actually improve with age.

"Agave is Better Than Sugar"
Agave nectar is heavily processed and can contain up to 90% fructose—significantly more than high-fructose corn syrup. Your liver processes it the exact same way it processes standard table sugar.
"Collagen Rebuilds Joints"
Eating collagen doesn't direct it to your skin or joints. Your digestive system breaks it down into basic amino acids just like a piece of chicken. Your body then decides where those amino acids go.
"Detox Teas Burn Fat"
Detox teas do not burn adipose tissue (fat). The rapid weight loss observed is entirely due to the tea acting as a harsh diuretic and laxative, causing you to lose only water weight and waste.
Everyday Kitchen Myths
"Searing Locks in the Juices"
Weighed experiments prove searing actually causes moisture loss through high-heat evaporation. We sear for the Maillard reaction (flavor crust), not to trap liquid.
"Marinating Tenderizes Meat"
Acidic marinades only penetrate 1-2 millimeters deep. It adds surface flavor, but left too long, it turns the exterior mushy rather than tenderizing the core.
"Oil Stops Pasta Sticking"
Oil and water don't mix. The oil floats, and when you drain the pasta, it coats the noodles, actively preventing your delicious sauce from sticking to them.
"You Must Wash Raw Chicken"
Washing chicken only splatters dangerous Campylobacter and Salmonella bacteria across your sink and counters. Cooking to 165°F is the only way to kill the bacteria.
"Pork Must Be Well-Done"
Trichinosis is virtually eradicated in modern farming. The USDA approves cooking pork to 145°F (medium) with a 3-minute rest, resulting in incredibly juicy, safe meat.
"Wood Boards Trap Bacteria"
Studies show wood naturally draws bacteria beneath the surface where they die off. Deep knife scars in plastic boards actually harbor far more stubborn bacteria.
"Boiling Water Ruins Coffee"
Brewing coffee at exactly 212°F (100°C) burns the grounds and over-extracts bitter tannins. Optimal extraction occurs between 195°F and 205°F.
"Shaking Bruises the Gin"
You can't "bruise" a distilled spirit. Shaking simply introduces micro-bubbles (making it cloudy) and dilutes the drink faster than stirring.
"Dark Beers Are Heavier"
Color comes from roasted malt, not calories or alcohol content. A dark, intimidating pint of Guinness actually has fewer calories than most pale IPAs.
"Alcohol Completely Cooks Out"
USDA data proves that even after baking or simmering a sauce for 2.5 hours, about 5% of the alcohol remains. A quick flambé retains up to 75%.
"Coffee Dehydrates You"
While caffeine is a mild diuretic, standard drip coffee is 99% water. The fluid you consume vastly offsets the mild diuretic effect, resulting in net hydration.
"Juice is Healthier Than Soda"
Without the fibrous flesh of the fruit, a glass of apple or orange juice often contains the exact same amount of sugar and calories as a glass of cola.
"Drink 8 Glasses of Water"
This arbitrary rule ignores the massive amount of hydration you get from solid foods, fruits, tea, and coffee. Drink when you are thirsty; your body regulates it perfectly.
"Egg Yolks Clog Arteries"
Dietary cholesterol is not blood cholesterol. Your liver controls your cholesterol levels, and studies show eating whole eggs does not increase heart disease risk.
"Late Night Carbs Make You Fat"
Your metabolism doesn't magically shut down at 8 PM. Weight gain is strictly dictated by a total daily caloric surplus, regardless of meal timing.
"Fresh Veggies Beat Frozen"
Frozen vegetables are flash-frozen at peak ripeness, locking in their nutrients. "Fresh" produce sitting in transport trucks often degrades in nutritional value.
"Sea Salt is Healthier"
Whether it's pink Himalayan, sea salt, or table salt, they all contain the exact same amount of sodium by weight. Trace minerals in sea salt are statistically insignificant.
"Juice Cleanses Flush Toxins"
Your body already has an elite, built-in detox system: your liver and kidneys. Expensive juice cleanses do not "flush" toxins, they just deprive you of essential protein.
